Enough time for a proper baked dish or a stew, without committing an entire afternoon to it.

Fast Greek cooking is not a compromise or a modern adaptation. A large part of the repertoire was always quick, because it was built around a small pantry and food that people made regularly rather than occasionally.

Dishes here include Tzatziki, Horiatiki salata, Souvlaki, Melitzanosalata, Horta vrasta and Loukoumades.

Every recipe on Kalliopi's Kitchen carries the dish's Greek name and a pronunciation, its region where that is meaningful, ingredient quantities in both metric and imperial, and an honest note on what commonly goes wrong. Nutrition figures are calculated estimates and are labelled as such.
