Weeknight territory. Grilled meats, quick stews, fritters and pan dishes that fit either side of getting home from work.

Fast Greek cooking is not a compromise or a modern adaptation. A large part of the repertoire was always quick, because it was built around a small pantry and food that people made regularly rather than occasionally.

Dishes here include Tzatziki, Horiatiki salata, Souvlaki, Horta vrasta, Ellinikos kafes and Dakos.
