Greek Olive Oil Recipes

Greece consumes more olive oil per person than anywhere on earth. In ladera cooking the oil is not a medium, it is the sauce.

Greek cooking uses a narrow pantry very well. A handful of ingredients appear again and again, in different combinations and cooked in different ways, and knowing what each one does is more useful than memorising individual recipes.

Dishes built on it include Mousakas, Tzatziki, Horiatiki salata, Spanakopita, Souvlaki and Gigantes plaki.
