Greek Lamb Recipes
Lamb is festival meat in Greece, tied to Easter above all, and usually treated simply with lemon, oregano and garlic rather than heavy sauces.
Greek cooking uses a narrow pantry very well. A handful of ingredients appear again and again, in different combinations and cooked in different ways, and knowing what each one does is more useful than memorising individual recipes.
Dishes built on it include Kleftiko, Tavas, Paidakia, Magiritsa, Antikristo and Mastelo Sifnou.
