The Mediterranean diet was defined by studying what Cretans actually ate in the 1960s. These are the dishes that study was describing.

Greek cooking accommodates most dietary requirements without special effort, largely because the Orthodox fasting calendar required it for roughly half the year. Dishes developed to meet those restrictions are not diminished versions of anything, they are the tradition itself.
