In short

Sheftalia are Cypriot sausages made from minced pork, onion, parsley and cinnamon, wrapped in caul fat rather than a skin, and grilled over charcoal. The caul fat bastes the meat as it melts, so no other fat needs to be added.

Sheftalia solve the sausage problem without a sausage casing. Instead of forcing minced meat into an intestine skin, Cypriot cooks wrap it in caul fat, the lacy membrane that lines an animal's abdomen, and let the fat do two jobs at once: hold the shape, and baste the meat as it renders over the coals.

The result is a sausage with a slightly crisp, almost see-through exterior and a moist, coarse-textured interior, tasting distinctly of onion, parsley and a background note of cinnamon that most people cannot immediately place.

Caul fat is unusual outside a proper butcher's counter, but it is the one ingredient here that cannot be substituted without changing the dish into something else. Ask a butcher directly. Most will have it or can order it, since it is used across several cuisines for exactly this purpose.

Key preparation steps

  1. Soak caul fat in cold water to make it pliable.

  3. Cut and wrap small portions in a double layer of caul fat.
  4. Grill hard over charcoal until the fat crisps and the meat is cooked through.

Working with caul fat

Caul fat arrives folded and slightly stiff. Unfold it gently in a bowl of cold water, which makes it pliable and much easier to cut and wrap without tearing.

It has natural holes and thin patches, so a double layer gives you a margin for error. Cut squares roughly 15 cm across, layer two together, and you have enough structure to wrap a sausage without it splitting on the grill.

If you genuinely cannot find caul fat, thin strips of pancetta or streaky bacon wrapped around the sausage is a workable substitute, though the texture and the way the fat renders will both be different. It is a compromise, not an equivalent.

The filling

Minced pork, or a mix of pork and lamb, with a large quantity of grated onion, a generous handful of chopped parsley, and a pinch of ground cinnamon. That cinnamon is easy to underdose out of caution and it is meant to be noticeable, if not dominant.

Grate the onion rather than chopping it, so it releases its juice directly into the mince and keeps the finished sausage moist. Squeeze out any excess liquid if the onion is very wet, or the mixture will be too loose to shape.

Some recipes bind the mixture with a little stale bread soaked in water or wine and squeezed out, which lightens the texture. It is a good addition if your mince is very lean.

Shaping and grilling

Take a portion of filling about the size of a small egg, shape it into a short fat cylinder, and place it at the edge of a caul fat square. Roll it up like a small parcel, tucking the ends under so the seam sits underneath.

Grill over genuinely hot charcoal, seam side down first. The fat will crackle and render, and you are looking for a deeply golden, almost lacy crust all over, which takes twelve to fifteen minutes with regular turning.

Do not press down on them with tongs or a spatula. That pushes out the fat that is supposed to be basting the meat from inside, and you lose exactly the thing that makes sheftalia good.

Ask a butcher directly for caul fat

It is rarely on display but most butchers carry it or can order it in for you, since several cuisines use it the same way.

Do not skip the chill

Twenty minutes in the fridge firms the parcels enough that they hold their shape going onto the grill.

Resist pressing them on the grill

Every press pushes out the rendering fat that is doing the basting. Turn with tongs, do not squeeze.

  1. Unfold the caul fat gently in a bowl of cold water and leave it to soften for 10 minutes. Cut into squares roughly 15 cm across, using a double layer for each sausage.
  2. In a large bowl, mix the minced pork, grated onion, parsley, cinnamon, and the soaked bread if using. Season generously with salt and pepper and mix well with your hands.
  3. Take a portion of the mixture about the size of a small egg and shape it into a short, fat cylinder.
  4. Place the cylinder at the edge of a caul fat square and roll it up, tucking the ends underneath so the seam sits on the bottom.
  5. Repeat with the remaining mixture. Chill the sheftalia for 20 minutes to firm up before grilling.
  6. Light a charcoal grill and let it burn down to hot, glowing coals.
  7. Grill the sheftalia seam side down first, turning regularly, for 12 to 15 minutes, until deeply golden and crisp all over and cooked through. Do not press down on them with tongs.
  8. Rest for 2 minutes, then serve with lemon wedges and warm pita.
