25 Greek Recipes Under an Hour
Enough time for a proper baked dish or a stew, without committing an entire afternoon to it.
An hour is enough for a proper cooked dish without giving up the afternoon. It covers most of the frying, a good many of the vegetable dishes and the simpler baking.
Keftedes, courgette fritters, chickpea fritters and loukoumades all fit. So do the vegetables simmered in tomato and olive oil, green beans and okra, and the rice dishes, spanakorizo and leeks with rice. The fish stews of Corfu are inside the hour too.
For baking there are kourabiedes, koulourakia and yogurt cake. The time on each recipe is the whole of it, preparation included.
Every recipe on Kalliopi's Kitchen carries the dish's Greek name and a pronunciation, its region where that is meaningful, ingredient quantities in both metric and imperial, and an honest note on what commonly goes wrong. Nutrition figures are calculated estimates and are labelled as such.
1. Smoky Aubergine Dip
Melitzanosalata · Μελιτζανοσαλάτα · meh-lee-tzah-no-sah-LAH-tah
The first ten minutes decide it. The aubergines are charred whole on a bare flame until the skin blackens and the flesh goes slack, and that smoke is the dish. An oven gives a beige puree that tastes of very little. Greeks still argue about vinegar or lemon, and whether walnuts belong in it.
Yiayia’s tip: Do not rinse the flesh. It is tempting when flecks of black skin get mixed in, but rinsing removes the smoke you spent twenty minutes creating. A few black flecks are a sign you did it right.
Make Smoky Aubergine Dip2. Loukoumades
Λουκουμάδες · loo-koo-MAH-des
Possibly the oldest dessert Europe still eats: honey tokens much like them went to the winners of the ancient games. The batter is wetter than any dough you could handle, and that water becomes the steam that blows the middle hollow. They do not keep. Within twenty minutes of the fryer they are soft.
Yiayia’s tip: Keep the spoons wet. The batter sticks ferociously to anything dry. A bowl of water beside the pan, and dipping the spoons between every single puff, is the difference between this being easy and being maddening.
Make Loukoumades3. Keftedes
Κεφτέδες · kef-TEH-des
Lighter than most meatballs, and the bread does it: stale bread, wetted and wrung out, holds water inside where breadcrumbs would tighten the mix. They taste of mint and oregano, not garlic and parsley, which separates them from Italian polpette. More often a meze than a main, and good cold the next day.
Yiayia’s tip: Wet your hands to shape. Damp palms stop the mixture sticking and give a smoother surface that browns more evenly.
Make Keftedes4. Yellow Split Pea Puree
Fava Santorinis · Φάβα Σαντορίνης · FAH-vah san-to-REE-nees
There are no fava beans in it. Greek fava is yellow split peas, and Santorini has its own protected variety, grown there for thousands of years. The peas collapse by themselves, and a wooden spoon gives a silkier puree than a machine. It comes warm, under raw onion, capers and a pool of oil.
Yiayia’s tip: Skim relentlessly. The foam in the first ten minutes is where the muddy taste lives. Take it all off and the finished puree is noticeably sweeter and cleaner.
Make Yellow Split Pea Puree5. Courgette Fritters with Feta
Kolokithokeftedes · Κολοκυθοκεφτέδες · ko-lo-kee-tho-kef-TEH-des
Every Greek island has its own version: grated courgette, feta and herbs, fried crisp and eaten hot with tzatziki and lemon. A courgette is over ninety percent water. The whole method is a fight against that, because water left in the mix means more flour, and more flour means a heavy fritter.
Yiayia’s tip: Squeeze twice. Once after the salting, then again just before mixing. Courgettes keep releasing water and the second squeeze always yields more.
Make Courgette Fritters with Feta6. Kourabiedes
Κουραμπιέδες · koo-rah-bee-EH-des
The other Christmas cookie, and the opposite of melomakarona in every way: almost pure butter and almond, baked pale, then buried in icing sugar. There is so little else in them that the butter you buy is the cookie you get. Nobody has ever eaten one tidily.
Yiayia’s tip: Pale, not golden. A browned kourabies is overbaked. They should look almost underdone when they come out, set but barely coloured.
Make Kourabiedes7. Rhodes Chickpea and Tomato Fritters
Pitaroudia · Πιταρούδια · pee-tah-ROO-thee-ah
A Rhodes fritter that hardly leaves Rhodes. Ask for one on the mainland and expect a blank look. The chickpeas are crushed, not pureed, so the texture is coarse and nutty where falafel is smooth, with grated tomato, onion and plenty of mint. Cumin goes in too, because the Anatolian coast is close.
Yiayia’s tip: Never use tinned chickpeas. They are already cooked and far too wet. The dish depends on raw soaked chickpeas cooking through during the fry.
Make Rhodes Chickpea and Tomato Fritters8. Cypriot Sausages in Caul Fat
Sheftalia · Σεφταλιά · shef-tah-lee-AH
A sausage with no casing. Cypriot cooks wrap the minced pork in caul fat, the lacy membrane from around an animal's abdomen, and over charcoal it does two jobs: it holds the shape, and it bastes the pork as it melts. Inside is onion, parsley and a trace of cinnamon that few people can name.
Yiayia’s tip: Ask a butcher directly for caul fat. It is rarely on display but most butchers carry it or can order it in for you, since several cuisines use it the same way.
Make Cypriot Sausages in Caul Fat9. Cypriot Black-Eyed Bean Salad with Chard
Louvi · Λούβι · LOO-vee
Fasting-day food in Cyprus, and nobody at the table feels deprived. Black-eyed beans are simmered with chard or spinach, given olive oil and lemon while still warm, then left to cool. It is a Lenten staple, vegan as it stands. Serve it as a full plate with bread and olives, not as a side.
Yiayia’s tip: No soaking needed. Black-eyed beans are thin-skinned enough to cook from fully dry in under an hour, unlike most other dried pulses.
Make Cypriot Black-Eyed Bean Salad with Chard10. Spanakorizo
Σπανακόρυζο · spah-nah-KOH-ree-zoh
Spinach and rice cooked in one pot until the rice has taken on the green. It is one of the ladera dishes, where the olive oil becomes part of the sauce, and among the quickest. Keep it wetter than a pilaf, loose enough for a spoon. Dill and lemon go in at the end.
Yiayia’s tip: Do not underestimate the spinach quantity. It reduces to roughly a quarter of its raw volume once wilted. What looks like too much going in is exactly right.
Make Spanakorizo11. Leek and Rice
Prasorizo · Πρασόρυζο · prah-SOH-ree-zoh
A winter pot, for the season when leeks are best. They soften over a low heat in a good deal of olive oil until sweet and almost jammy, then simmer with rice into something halfway between risotto and soup. Same method as spanakorizo, but paler and sweeter. Lemon goes in off the heat.
Yiayia’s tip: Wash sliced, not whole. Slicing the leeks before washing exposes the grit trapped between the layers, which a quick rinse of a whole leek can miss entirely.
Make Leek and Rice12. Fried Salt Cod with Garlic Dip
Bakaliaros skordalia · Μπακαλιάρος σκορδαλιά · bah-kah-lee-AH-ros skor-dah-lee-AH
The dish of Greek Independence Day, March 25th, a date inside Lent. Salted, dried fish is allowed under the stricter fasting rules where fresh is not, which is how salt cod became the fish of the day. The skordalia is no side dish. It is half of the plate and deserves equal care.
Yiayia’s tip: Do not rush the soak. Twenty four to forty eight hours with regular water changes is what draws out the curing salt properly. Taste a piece before frying to check.
Make Fried Salt Cod with Garlic Dip13. Koulourakia
Κουλουράκια · koo-loo-RAH-kee-ah
Baked in enormous batches before Easter, because they keep well and get eaten all through Easter week. The dough is a plain butter one with vanilla and orange zest, and baking it is the easy part. The time goes on shaping: ropes rolled by hand and twisted into spirals, braids and figure-eights, one by one.
Yiayia’s tip: Do not overwork the flour. Fold it in only until the dough comes together. Overworking it gives a tough, chewy cookie rather than a tender, short one.
Make Koulourakia14. Chickpea Fritters
Revithokeftedes · Ρεβιθοκεφτέδες · reh-vee-thoh-kef-TEH-thes
A keftes rebuilt around chickpeas, with onion, herbs and cumin, and no mere stand-in for the meat one. They belong most to the Cyclades, where chickpeas are an old staple crop, and to Lent on the mainland. Chickpeas hold more water than people expect, so the mixture must be dry. Chill the patties before frying.
Yiayia’s tip: Cook dried chickpeas until very soft. Well beyond salad tenderness. A proper long simmer softens them enough to mash easily without extra binders.
Make Chickpea Fritters15. Corfu Spicy Fish Stew
Bourdeto · Μπουρδέτο · boor-DEH-toh
The hottest of Corfu's spiced dishes, and red from paprika, not tomato. A generous amount of sweet paprika and a careful amount of hot are cooked into the onions first. Scorpionfish is traditional, and any firm white fish works. Paprika scorches and turns bitter in a very hot pan, so lower the heat first.
Yiayia’s tip: Cook the onions properly. A full fifteen minutes over low heat is what builds the sweetness that stands in for the tomato most other Greek fish stews rely on.
Make Corfu Spicy Fish Stew16. Corfu Almond Nougat
Mandolato · Μαντολάτο · man-doh-LAH-toh
Nougat made for Easter on Corfu, and a close relative of Italian torrone, which is the island's Venetian history showing. Cooked honey is whipped into stiff egg whites over low heat until thick, pale and glossy, then toasted almonds go in and it sets between sheets of rice paper. It tests patience more than skill.
Yiayia’s tip: Cook the honey to a real soft-ball stage. Undercooking it leaves the finished nougat soft and sticky rather than properly firm. A sugar thermometer removes the guesswork.
Make Corfu Almond Nougat17. Thessaloniki Kebab with Yogurt and Tomato
Giaourtlou · Γιαουρτλού · yah-oor-TLOO
Thessaloniki owes this to the refugees who came from Asia Minor after 1922, with a pairing of yogurt and grilled meat the mainland did not have. It is layered, not mixed: torn, toasted pita, then minced meat kebabs, then warm tomato sauce, then garlicky yogurt. The meat takes cumin, where mainland grills use oregano.
Yiayia’s tip: Add the yogurt last, straight from the fridge. The contrast between the cold yogurt and the hot meat and sauce is the entire point. Adding it early loses that completely.
Make Thessaloniki Kebab with Yogurt and Tomato18. Epirus Cornbread with Greens
Batzina · Μπατζίνα · bah-DZEE-nah
The plain, frugal end of Epirus baking, a long way from the region's hand-rolled pies. Cornmeal, water and olive oil, no yeast, baked into a loaf that mountain villages made as everyday bread. Some fold in wild greens or spring onion. Dense is correct: it sits closer to baked polenta than to a risen loaf.
Yiayia’s tip: Oil the tin generously. Cornbread batter is prone to sticking. A thorough coating of oil helps it release cleanly once baked.
Make Epirus Cornbread with Greens19. Green Beans in Tomato and Olive Oil
Fasolakia lathera · Φασολάκια λαδερά · fah-soh-LAH-kyah lah-theh-RAH
Green beans, with potato and onion, cooked far past the point where other cuisines stop, on purpose. A bean cooked ladera, in olive oil and tomato, is meant to be soft all the way through, never crisp. Finish it uncovered so the sauce thickens. Summer food, often a light main with bread and feta.
Yiayia’s tip: Do not skimp on the olive oil. It becomes part of the sauce itself over the long simmer. A ladera dish made with too little oil is a noticeably thinner, less satisfying dish.
Make Green Beans in Tomato and Olive Oil20. Fried Aubergine Slices
Melitzanes tiganites · Μελιτζάνες τηγανητές · meh-leed-ZAH-nes tee-gah-nee-TES
One of the two simplest things on a Greek meze table, the other being fried courgette. Aubergine is the richer of the pair, with a slightly smoky depth once fried. The slices are thin, lightly floured and served with tzatziki and lemon. They soften within minutes, so they go straight to the table.
Yiayia’s tip: Salt properly and for long enough. This draws out the bitter liquid aubergine holds and is what lets the slices crisp rather than absorb oil and turn soggy.
Make Fried Aubergine Slices21. Lentils and Rice
Fakorizo · Φακόρυζο · fah-KOH-ree-zoh
Lentil soup with rice cooked into the same pot, which makes it thick enough to eat like a pilaf. It is cheap store-cupboard food that saw Greek families through the fasts and the lean years. The step people skip is the last one: vinegar and olive oil, heated and poured over just before serving.
Yiayia’s tip: Add the lentils first, then the rice. Lentils need considerably longer to cook. Staggering the two lets them finish tender together.
Make Lentils and Rice22. Yogurt Cake
Yiaourtopita · Γιαουρτόπιτα · yah-oor-TOH-pee-tah
A plain Sunday cake, not an occasion cake. Yogurt does the job of much of the fat and liquid, and its acidity works on the raising agents, so the crumb comes out lighter than expected, with a faint tang. It stays moist for days and forgives a nervous baker.
Yiayia’s tip: Use thick, full-fat yogurt. It gives real moisture and a slight tang that a thin, low-fat yogurt cannot replicate.
Make Yogurt Cake23. Potato Salad
Patatosalata · Πατατοσαλάτα · pah-tah-toh-sah-LAH-tah
There is no mayonnaise in a Greek potato salad. Olive oil and red wine vinegar go on while the potatoes are warm, when they take the dressing in instead of wearing it on the outside. Red onion, capers and fresh herbs finish it. It travels better in the heat than a mayonnaise salad.
Yiayia’s tip: Boil the potatoes whole and unpeeled. This keeps them from absorbing extra water, which would otherwise dilute the finished salad's flavour.
Make Potato Salad24. Okra in Tomato and Olive Oil
Bamies latheres · Μπάμιες λαδερές · BAH-myes lah-theh-RES
Okra frightens cooks because it can turn slimy. The traditional answer is a short soak in vinegar before the pods go near the pot. After that it is an ordinary ladera dish, simmered slowly in tomato and plenty of olive oil until the oil becomes the sauce. Shake the pan, do not stir.
Yiayia’s tip: Do not cut into the pods when trimming. Only trim the woody stem end. Exposing the interior releases the sticky substance that causes sliminess.
Make Okra in Tomato and Olive Oil25. Corfu White Fish Stew
Bianco · Μπιάνκο · bee-AHN-koh
The name is Italian for white, a trace of Corfu's Venetian past, and it tells you what is missing: tomato. Where bourdeto and pastitsada are bold and spiced, this is firm white fish braised gently with garlic, olive oil and potato in a pale broth. The lemon at the end wakes it up.
Yiayia’s tip: Do not let the garlic brown. Cooked too hot or too long, it turns bitter, which this pale, delicate stew has nowhere to hide.
