15 Greek Recipes from Corfu and the Ionian
Four centuries of Venetian rule left the Ionian islands with a cuisine no other part of Greece has: sofrito, pastitsada, bourdeto, and a comfort with garlic, vinegar and pasta.
Four centuries of Venetian rule left the Ionian islands with food no other part of Greece has. Corfu is comfortable with garlic, vinegar and pasta in a way the rest of the country is not, and three dishes define it.
Sofrito is veal braised in white wine, vinegar, garlic and parsley, with no tomato in it. Pastitsada is beef slow-braised in a spiced tomato sauce and served over thick tubular pasta. Bourdeto is a fish stew built on paprika and cayenne instead of tomato.
Around them sit a cured and smoked pork fillet sliced thin as a meze, the almond nougat made at Easter, and a spoon sweet made from kumquats. Kefalonia and Zakynthos each have a dish here as well.
Every recipe on Kalliopi's Kitchen carries the dish's Greek name and a pronunciation, its region where that is meaningful, ingredient quantities in both metric and imperial, and an honest note on what commonly goes wrong. Nutrition figures are calculated estimates and are labelled as such.
1. Veal in Garlic and Vinegar Sauce
Sofrito · Σοφρίτο · so-FREE-toh
Venice ruled Corfu for four hundred years and the Ottomans never took it. This is how that tastes. No tomato, no cinnamon, no oregano: thin veal braised in white wine, vinegar, a great deal of garlic and parsley. Three dishes define Corfiot cooking: pastitsada, bourdeto and this, the most delicate of them.
Yiayia’s tip: Do not brown too hard. Sofrito's sauce should stay pale. Deep browning gives a darker, heavier sauce that belongs to a different dish.

Pastitsada · Παστιτσάδα · pah-stee-TSAH-thah
Corfu spent centuries under Venice, and this is where it shows. Beef braises for close to three hours in tomato with cinnamon, cloves, allspice and bay, nothing like the oregano and lemon of the mainland, then goes onto thick tubular pasta under grated hard cheese. Make it a day ahead, because the sauce deepens overnight.
Yiayia’s tip: Brown the beef properly first. This step builds much of the sauce's depth over what is otherwise a long, gentle braise. Do not rush or skip it.

Bourdeto · Μπουρδέτο · boor-DEH-toh
The hottest of Corfu's spiced dishes, and red from paprika, not tomato. A generous amount of sweet paprika and a careful amount of hot are cooked into the onions first. Scorpionfish is traditional, and any firm white fish works. Paprika scorches and turns bitter in a very hot pan, so lower the heat first.
Yiayia’s tip: Cook the onions properly. A full fifteen minutes over low heat is what builds the sweetness that stands in for the tomato most other Greek fish stews rely on.

Noumboulo · Νουμπούλο · noom-BOO-loh
Corfu's cured pork: a whole fillet rubbed with red wine, salt and spices, dried in the air and given a light smoking, usually over olive or oak. It sits nearer to Italian charcuterie than to mainland Greek curing, which leans towards sausages. It takes weeks. Slice it thin, more like a salami than a ham.
Yiayia’s tip: Do not under-salt the cure. The salt ratio is a genuine food safety matter, not just seasoning, since it is what protects the meat during the drying stage that follows.

Mandolato · Μαντολάτο · man-doh-LAH-toh
Nougat made for Easter on Corfu, and a close relative of Italian torrone, which is the island's Venetian history showing. Cooked honey is whipped into stiff egg whites over low heat until thick, pale and glossy, then toasted almonds go in and it sets between sheets of rice paper. It tests patience more than skill.
Yiayia’s tip: Cook the honey to a real soft-ball stage. Undercooking it leaves the finished nougat soft and sticky rather than properly firm. A sugar thermometer removes the guesswork.

Kefalonitiki kreatopita · Κεφαλονίτικη κρεατόπιτα · keh-fah-loh-NEE-tee-kee kreh-ah-TOH-pee-tah
Kefalonia's meat pie has little in common with the mainland one beyond the phyllo. The filling is lamb or goat with plenty of fresh mint, cinnamon and clove, and rice that thickens the meat juices so the pie cuts into clean slices. On the island it is an Easter centrepiece, served at the table.
Yiayia’s tip: Cool the filling completely before assembling. A hot filling makes the phyllo soggy and difficult to layer properly.

Bianco · Μπιάνκο · bee-AHN-koh
The name is Italian for white, a trace of Corfu's Venetian past, and it tells you what is missing: tomato. Where bourdeto and pastitsada are bold and spiced, this is firm white fish braised gently with garlic, olive oil and potato in a pale broth. The lemon at the end wakes it up.
Yiayia’s tip: Do not let the garlic brown. Cooked too hot or too long, it turns bitter, which this pale, delicate stew has nowhere to hide.

Savoro · Σαβόρο · sah-VOH-roh
Corfu's answer to keeping a catch edible in August with no ice. The fish is fried, then covered in hot red wine vinegar with garlic, rosemary and currants. Saor, the Venetian word, gave it its name. The currants are there to sweeten the vinegar. Eat it cold, a day or two later.
Yiayia’s tip: Dry the fish before flouring. Any surface water turns the flour to paste and the fish steams instead of crisping. A crisp crust is what holds the fish together once the vinegar goes over.

Bourou bourou · Μπουρού μπουρού · boo-ROO boo-ROO
The name is the noise of the pot when everything goes in together. Corfu's household soup takes whatever the garden has in surplus, onion, carrot, potato, courgette and tomato, and cooks it down in a lot of olive oil. Small pasta is added late, and its starch thickens the soup into a meal.
Yiayia’s tip: Grate the tomatoes, do not chop them. Halving a ripe tomato and grating it against the coarse holes leaves the skin in your hand and puts the pulp in the pot. It dissolves into the soup instead of sitting in it as lumps.

Riganada · Ριγανάδα · ree-gha-NAH-tha
Oregano, rigani, gives this its name, and it is the main flavour, not a finishing pinch. On Kefalonia and Lefkada a barley rusk is moistened, then loaded with olive oil, grated tomato and dried oregano. Cretan dakos is its nearest relative. It is best five minutes after assembly, before the rusk goes soggy.
Yiayia’s tip: Salt the tomato, not the rusk. Barley rusks are already salty. Season the grated tomato instead and taste before adding more, or the finished plate can be overwhelming.

Tsigareli · Τσιγαρέλι · tsee-gah-REH-lee
Greens with real heat, unlike horta, the plain boiled greens of the mainland. Corfu takes mixed greens, chard and spinach with wild leaves, and fries them in a lot of olive oil, with chilli and garlic. Pair a soft green with one that has more backbone. Little else goes in, so use good oil.
Yiayia’s tip: Fry hard, do not stew. This is what separates tsigareli from plain boiled horta. Keep the pan properly hot and toss constantly rather than letting the greens sit in liquid.
Make Corfu Spicy Sauteed Greens12. Zakynthos Garlic and Tomato Bread Bake
Skordostoumbi Zakynthou · Σκορδόστουμπι Ζακύνθου · skor-THOH-stoom-bee zah-KEEN-thoo
Zakynthos does not throw old bread away. It tears it up, soaks it in tomato and plenty of garlic, packs it into a dish and bakes it. The point is the contrast: a crisp top over a soft, saturated middle. A light main course, or a side to grilled fish or meat.
Yiayia’s tip: Use genuinely stale bread. Fresh, soft bread turns to complete mush rather than holding any texture. A day or two old, with a firm crumb, is what this dish wants.

Fogatsa Kerkyras · Φογάτσα Κέρκυρας · foh-GAH-tsah KER-kee-ras
Corfu's Easter bread, not the braided tsoureki of the mainland. The name comes from the Italian focaccia, a trace of the island's Venetian past, though the bread is nothing like it: a dense, cake-like round loaf scented with orange and mastic. With no braiding to learn, it is the easier of the two.
Yiayia’s tip: Do not rush the first rise. A rich, enriched dough like this needs longer than a plain bread. A genuinely doubled dough gives a far better texture than a rushed one.

Glyko koumkouat · Γλυκό κουμκουάτ · GLEE-koh koom-koo-AHT
A British botanist brought kumquats to Corfu in the nineteenth century, and hardly anywhere else in Greece grows them now. The island makes liqueur and marmalade from them, and this: whole fruit in thick syrup, served to guests on a small plate. Kumquats, sugar and water, simmered gently until the bitter skin mellows.
Yiayia’s tip: Pierce the fruit before soaking. This lets the syrup penetrate properly and helps release the kumquat's natural bitterness during the soaking stage.
Make Kumquat Spoon Sweet15. Kokoras Pastitsada
Κόκορας παστιτσάδα · KOH-koh-rahs pah-stee-TSAH-thah
Before beef became the default, this was Corfu's Sunday pastitsada: a whole rooster, braised for hours in tomato and red wine with cinnamon and clove. That spicing is what makes it Corfiot and not any other tomato stew. It goes over thick bucatini under grated hard cheese. Turn the pasta through the sauce first.
Yiayia’s tip: Use a genuine rooster or large boiling hen. A standard young chicken breast has none of the depth or structure needed to hold up over this long a braise, and will fall apart into shreds well before the sauce has developed.
