Baked Greek Recipes

Sto fourno, in the oven. Greek home cooking sends an extraordinary amount of food to the oven in one large dish, often to a bakery down the road in the old days.

Technique in Greek home cooking tends to be simple and unhurried. There is very little last-minute work, very few sauces made to order, and a great deal of food that improves for sitting around. Most of the skill is in judgement rather than in knife work.

Recipes using this method include Mousakas, Spanakopita, Pastitsio, Baklavas, Gigantes plaki and Patates lemonates.
