Method

  1. Mix the cheese, chopped mint, egg and a good grinding of pepper together.
  2. Mix the flour and salt, then work in the olive oil and water or wine until a smooth dough forms. Knead briefly, cover, and rest for 20 minutes.
  3. Roll the dough out and cut into rounds about 10 cm across.
  4. Place a spoonful of filling in the centre of each round.
  5. Gather the edges up and pinch together firmly at the top, forming a small sealed pouch.
  6. To fry: heat oil to 175C and fry the pouches in batches for 3 to 4 minutes, until deeply golden. Drain on kitchen paper.
  7. To bake: heat the oven to 190C fan 170C, brush the pouches with beaten egg, and bake for 20 to 25 minutes, until golden.
  8. Serve warm.
