The one real technical step is slicing and grilling the aubergine thin and pliable enough to roll without cracking, which is worth taking slowly rather than rushing.

Key preparation steps

  1. Slice aubergine thin lengthways and grill until pliable.

Preparing the aubergine wraps

Slice the aubergine lengthways into long, thin strips, about half a centimetre thick, salt lightly and leave to drain for fifteen minutes, then pat dry and grill or lightly fry each strip briefly on both sides, just until pliable and lightly coloured, not fully cooked through, since it will finish baking later.

The filling

Mix raw rice with grated onion, chopped dill and mint, a little tomato paste and olive oil, exactly the same base used in vegan vine leaf dolmades, since the filling logic transfers directly regardless of what wraps around it.

Rolling and baking

Place a spoonful of filling at one end of each aubergine strip and roll up firmly, then arrange the rolls seam side down in a baking dish. Pour over a light tomato sauce and enough water to come partway up the rolls, cover, and bake gently until the rice is fully tender.

This is what lets each strip roll around the filling without cracking or tearing.

Grill just until pliable

It does not need to be fully cooked at this stage, since it finishes baking in the tomato sauce later.

Roll firmly

The rice swells considerably as it bakes. A loose roll can open up in the dish.

  1. Salt the aubergine strips and leave to drain for 15 minutes. Pat dry.
  2. Grill or lightly fry each strip for 1 to 2 minutes per side, until pliable and lightly coloured. Set aside to cool slightly.
  3. Mix the rice, grated onion, dill, mint and half the olive oil in a bowl. Season generously.
  4. Place a spoonful of filling at one end of each aubergine strip and roll up firmly.
  5. Heat the oven to 180C fan 160C. Arrange the rolls seam side down in a baking dish.
  6. Mix the tomatoes, tomato paste, remaining olive oil and water. Pour over the rolls.
  7. Cover with foil and bake for 40 to 45 minutes, until the rice is fully tender.
  8. Serve warm or at room temperature.
