Method
- Heat the olive oil in a wide pan. Brown the minced meat hard, breaking it up well, then add the onion and garlic and cook for 10 minutes, until soft.
- Stir in the rice and water, season with oregano, salt and pepper, and cook uncovered for 12 to 15 minutes, until the rice has absorbed the liquid and the mixture holds together.
- Stir through the chopped parsley and spread the filling on a tray to cool completely.
- Heat the oven to 190C fan 170C. Oil a 30 x 22 cm baking dish.
- Layer half the phyllo sheets into the dish, brushing each with olive oil.
- Spread the cooled filling evenly over the phyllo base.
- Top with the remaining phyllo sheets, brushing each with oil, and tuck in the edges.
- Score the top into portions and brush with any remaining oil.
- Bake for 45 to 50 minutes, until deeply golden. Rest for at least 15 minutes before cutting along the scored lines.
