  1. Soak the salt cod in several changes of fresh water for at least 24 hours, then drain and pat dry.
  2. Heat the oven to 190C fan 170C.
  3. Heat the olive oil in an ovenproof pan and cook the onion and celery for 10 minutes, until soft.
  4. Add the garlic and cook for 1 minute, then add the tomatoes, wine and bay leaf. Simmer for 15 minutes.
  5. Nestle the cod pieces into the sauce.
  6. Transfer to the oven and bake, uncovered, for 25 to 30 minutes, until the fish flakes easily.
  7. Remove the bay leaf, scatter with parsley, and serve hot from the dish.
