Tiganita. Fritters, croquettes, calamari and cheese, fried in good oil and hit with lemon while still too hot to eat comfortably.

Technique in Greek home cooking tends to be simple and unhurried. There is very little last-minute work, very few sauces made to order, and a great deal of food that improves for sitting around. Most of the skill is in judgement rather than in knife work.

Recipes using this method include Loukoumades, Keftedes, Saganaki, Strapatsada, Halloumi and Kolokithokeftedes.
